Working Mommy Wednesday ~ September 1, 2010



It's been quite some time since I've written a Working Mommy Wednesday post, but one of the prompts for this week was an easy one for me so I thought I'd join in the fun.

Being a busy full time working mom, there are many days I am at a loss as to what to make for dinner.  I have become a fan of using my crock-pot to make quick, tasty meals that are ready by the time I get home from work.

Now that fall is right around the corner, I've been in the mood for some yummy comfort food. 

One of my favorite recipes is Crock Pot Mac-N-Cheese.  Here is the recipe:

2 cups cooked elbow macaroni
1/2 stick melted butter
1 12oz. can evaporated milk
1 1/2 cup milk
10oz. mild shredded cheddar cheese
10oz. sharp shredded cheddar cheese
2 eggs beaten (I use egg beaters as I'm allergic to eggs and can't tell the difference)
1 tsp. salt
pepper to taste

Throw all of the above ingrediants in your Pam sprayed crock pot, mix 'em up, and cook on low for 3 - 4 hours.

Now you have delicious home made mac-n-cheese.  I like to double this recipe so we have a lot of leftovers.  I have no clue the fat and calories, but I really don't think I want to know :-)

  8. If you're severely out of shape, going to a commercial gym can be embarrassing. Fitness bands can be used to do weighted squats, bicep curls and other various exercises. Weight lifting for the benefit of working all major muscles groups at once is best performed using machines.
